A hotel that stops serving coffee at 22:00 is not choosing to forgo the revenue. It is choosing not to lose more on wages. An overnight F&B shift against thin, unpredictable demand is a reliable way to turn a profitable daypart into a subsidised one, so the offer shrinks to a filter urn, a pod machine in the room, or nothing.
A robot barista changes the arithmetic because its cost does not scale with opening hours. The daily service round is the same whether the machine trades 12 hours or 24. Every cup sold in the window that used to be closed carries only its consumable cost — about $0.55 — against a room-service or lobby price.

Siting and services
Settle these before the interior designer draws anything:
- Floor loading. 500–750 kg on a small footprint. Mezzanines, raised access floors, and older timber structures need checking.
- Power. A dedicated circuit. Retro-fitting one across a finished lobby is frequently the largest cost outside the machine.
- Water and drainage. Plumbed operation is preferable at any real volume; a tanked unit shifts that burden into the daily round.
- Service access. Clearance at the rear, and a route from the loading bay that a crate actually fits through, lift included.
- Acoustics. Grinders are loud. A lobby installation near seating or reception needs that considered rather than discovered.
- Payment. Room charging usually matters more than card acceptance. Confirm the machine can post to your PMS, or accept that it cannot.
What to watch for
- Nobody owns the daily round. The most common failure in hospitality deployments. If the restock is not written into a named department's checklist, the machine will be out of milk within a month.
- Breakfast peak sizing. A 40 cups/hour machine will not clear a 200-cover breakfast service. It supplements the buffet urns; it does not replace them.
- Novelty decay. Guests find it remarkable for a season. Judge the investment on availability and consistency, which is what it will be delivering in year two.
- Replacing service rather than extending it. Removing a staffed bar to install a machine reads as a downgrade. Covering hours that were previously dark does not.
